Hosted in a beautiful Riad, your instructor will explain the different types of mint (Spearmint, Absinthe, Pennyroyal) and how they change with the seasons. watch the ritual washing of the tea, the boiling, and the theatrical high pour—essential for aerating the tea and creating the 'Riza' (foam) crown. While the tea steeps, you will get your hands floury making Moroccan pastries. Learn the delicate technique of rolling almond paste into 'Cornes de Gazelle' (Gazelle Horns) or folding honey-soaked Briouates. Sit down to enjoy your tea and warm pastries, discussing life in the Medina with your host.
